材料:
豬肉碎 (梅頭) ... 半斤 ... 我鍾意香口點,用半肥瘦梅頭
蜜糖 ... 10g
水 ... 15g
醃料:
黑糖 ... 1湯匙 ... 家中無黑糖,用了咖啡糖代替
砂糖 ... 1 湯匙
生抽 ... 1.5 湯匙
魚露 ... 半湯匙
酒 ... 半湯匙
胡椒粉 ... 適量
工具:
鍚紙、保鮮紙、木棍

1. 把醃料倒入碗拌勻,加入豬肉碎攪 5 分鐘至有黏性
2. 把豬肉分小份,搓成球狀放在鍚紙,在上面鋪保鮮紙,之後用木棍壓扁至 2mm 左右厚

4. 取出肉塊反轉,拿走錫紙,再以 230 度波 5 分鐘
5. 蜜糖與水混合,掃上肉塊以 230 度波 3 分鐘

6. 反轉再掃上蜜糖水波多 3 分鐘,肉乾邊焦黑即成

在入爐前,灑上適量黑胡椒在肉塊上,就變成黑椒豬肉乾 ... 少少椒好惹味
