食材:
帶皮豬腩肉 ... 一件 (約 300 g)
蔥 ... 適量
薑 ... 3 片
米酒 ... 1 湯匙
醬汁調味料:
蒜蓉 ... 2 茶匙
生抽 ... 1 湯匙
陳醋 / 黑醋 ... 1 茶匙
味醂 ... 1 茶匙
糖 ... 1 茶匙
麻油 … 適量
做法:
1. 豬腩肉洗淨汆水 (可以去除肉的腥臭味)
→ 將原條豬腩肉放入鍋內,加入蓋過肉的水,用中小火煮至微滾,即刻撈起用水洗淨

2. 重新煮一鍋滾水,加入豬腩肉、蔥、薑和米酒,煮滾後用小火加蓋煮 30 分鐘

3. 將煮好的豬腩肉取出,放入冰水中過冷河,吸乾水份,切片上碟
